S’more Campfire Stout Please
510 Bistro in downtown Merced, CA hosted the other Chico brewery at Wednesday night Pint Night last week. It was appropriate that on a stormy night the guest brewery was High Water Brewing. They delivered their beers and their brewmaster Steve Altimari!
I first experienced High Water’s Campfire Stout at Handles Gastropub in Pleasanton, CA several months ago. A bold stout with subtle but noticeable graham cracker and chocolate flavor. This is a nice balance that does not take away from the base style. Campfire is still a distinctive stout by style. It inspired me to brew my own version which is still in the planning stages. My recipe will attempt to step up the marshmallow aroma a bit. High Water adds graham cracker to the mash and uses a marshmallow extract to deliver the character of the ooey gooey white stuff. I am hoping dry hopping the marshmallows and a very late boil addition will accomplish this. Campfire is a big almost smokey stout weighing in at 6.5% ABV and 38 IBU’s.
Very, very nice. I look forward to sitting around many more Campfires to stay warm during the holidays.
